editör editor Every trade fair reflects the current state of an industry; some, however, help shape its future. IDMA Istanbul 2026 was one such event. More than a showcase of new technologies, it served as a powerful meeting point where the collective expertise of the grain value chain—from grain and flour to bread and pasta—came together. As BBM Magazine, we were once again at the heart of the exhibition. Throughout the three-day event, BBM Kitchen brought together industry professionals, academics, public representatives, and technology leaders around the same table. For us, BBM Kitchen was far more than an event space; it evolved into a dynamic communication platform where knowledge met experience and technology met flavor. The discussions explored many of the issues that will shape the future of our industry, from changing consumer expectations and sustainable production to AI-powered technologies and functional foods. The exchange of ideas once again demonstrated that the future of food production can only be built through collective wisdom and interdisciplinary collaboration. In this issue, we continue to capture the pulse of IDMA Istanbul. We bring you the highlights from the sessions of the IDMA Global Grain & Milling Forum, insights from leading industry figures, and the innovative technologies introduced throughout the exhibition. Alongside these, our in-depth feature articles examine the transformation taking place across the global grain and food industries, offering comprehensive analyses of evolving consumer trends, advances in production technologies, and sustainability- driven approaches. Today, the entire ecosystem—from milling and baking to pasta and snack production—is undergoing an unprecedented transformation. Competitiveness is no longer defined solely by production capacity, but by innovation, efficiency, knowledge sharing, and the ability to adapt to change. As BBM Magazine, we will continue to embrace an editorial approach that not only follows this transformation but also contributes to it by bringing together all stakeholders across the industry on a common platform. Until we meet again in our next issue… Her fuar, sektörün bugününü gösterir; bazı organizasyonlar ise geleceğini şekillendirir. IDMA İstanbul 2026, bu yönüyle yalnızca yeni teknolojilerin sergilendiği bir platform değil, aynı zamanda tahıldan una, ekmekten makarnaya uzanan değer zincirinin ortak aklını bir araya getiren güçlü bir buluşma noktası oldu. BBM Dergisi olarak bu yıl da fuarın tam merkezinde yer aldık. Üç gün boyunca düzenlediğimiz BBM Mutfak, sektör profesyonellerini, akademisyenleri, kamu temsilcilerini ve teknoloji liderlerini aynı masa etrafında buluşturdu. Bizim için BBM Mutfak, yalnızca bir etkinlik alanı değil; bilginin deneyimle, teknolojinin lezzetle buluştuğu yaşayan bir iletişim platformu haline geldi. Söyleşiler boyunca değişen tüketici beklentilerinden sürdürülebilir üretime, yapay zekâ destekli teknolojilerden fonksiyonel gıdalara kadar sektörün geleceğini şekillendirecek pek çok konu masaya yatırıldı. Ortaya çıkan fikir alışverişi, üretimin geleceğinin ancak ortak akıl ve disiplinler arası iş birliğiyle inşa edilebileceğini bir kez daha gösterdi. Bu sayımızda da IDMA İstanbul’un nabzını tutmaya devam ediyoruz. IDMA Global Grain & Milling Forum’da gerçekleştirilen oturumlardan öne çıkan değerlendirmeleri, sektörün önde gelen isimlerinin analizlerini ve fuarda tanıtılan yenilikçi teknolojileri sayfalarımıza taşıyoruz. Bunun yanında, küresel gıda ve tahıl endüstrisindeki dönüşümü ele alan araştırma dosyalarımızla değişen tüketici eğilimlerini, üretim teknolojilerindeki gelişmeleri ve sürdürülebilirlik odaklı yeni yaklaşımları kapsamlı şekilde değerlendiriyoruz. Bugün değirmencilikten fırıncılığa, makarnadan atıştırmalık sektörüne kadar uzanan geniş ekosistem, hiç olmadığı kadar hızlı bir dönüşüm yaşıyor. Rekabet artık yalnızca üretim kapasitesiyle değil; inovasyon, verimlilik, bilgi paylaşımı ve değişime uyum sağlayabilme yeteneğiyle belirleniyor. Biz de BBM Dergisi olarak bu dönüşümü yalnızca takip eden değil, sektör paydaşlarını aynı platformda buluşturarak ona katkı sunan bir yayın anlayışını sürdürmeye devam edeceğiz.
