Over the next decade, success will belong not to the companies with the largest production capacity, but to those capable of understanding changing nutritional expectations and translat- ing them into innovative technologies. The growing interest in alternative flours is driven by much more than the rise of gluten-free diets. The real catalyst has been a profound shift in consumer awareness. Today’s con- sumers are looking beyond taste and price, paying closer at- tention to protein levels, fibre content, glycaemic response and the naturalness of ingredients. These evolving expecta- tions are encouraging manufacturers to move beyond conven- tional refined wheat flour and develop entirely new formula- tions designed to deliver greater nutritional value. Pulses Return to the Spotlight Pulses lie at the heart of this transformation. Flours produced from lentils, chickpeas, peas and faba beans are increasingly being incorporated into bakery and pasta formulations thanks to their high protein and dietary fibre content. Besides enhanc- ing nutritional value, these ingredients also enable manufactur- ers to develop formulations richer in essential minerals such as iron, zinc and magnesium. Another major advantage of pulses is their contribution to sustainability. Their ability to fix atmospheric nitrogen reduc- es the need for synthetic fertilisers, improves soil fertility and helps lower agriculture’s carbon footprint. As a result, pulses are no longer viewed merely as alternative protein sources, but as strategic crops supporting climate-smart agriculture. Ancient Grains Gain New Value The second pillar of the alternative flour movement is formed by ancient grains such as quinoa, buckwheat, amaranth, sor- ghum and millet. Once confined to niche applications, these crops are now among the most promising raw materials for the functional food industry. Merci- mek, nohut, bezelye ve bakla gibi ürünlerden elde edilen unlar, yüksek protein ve lif içerikleri sayesinde hem fırıncılık hem de makarna sektöründe giderek daha fazla kullanılıyor. Bu hammaddeler yalnızca ürünlerin besleyici değerini artır- makla kalmıyor; demir, çinko ve magnezyum gibi mineraller açısından daha zengin formülasyonların geliştirilmesine de imkân tanıyor.
