Yet the fate of the investment is often de- cided during the minutes when the line is idle. Pan and recipe changes, cleaning, rebalancing the proofing process, and slicer and packaging adjustments widen the gap between nameplate capacity and actual output. Adaptability, rather than speed alone, is therefore the defining con- cept of the new era. The International Association of Plant Bakers (AIBI) estimates European consumption of bak- ery products at around 42 million tonnes, worth EUR 158 billion. Endüstriyel üretim toplamın yaklaşık yüzde 70’ini oluşturuyor. The speed of response to changing demand, the ability to manufacture different recipes on the same line with consistent quality, and the visibility of energy and labour losses now determine the true value of capacity. High costs and labour shortages in Europe, and price pressure and product diversi- fication in Türkiye, are leading producers to the same question: Should they install a new line, or make the existing one smarter and more flexible? Endüstriyel ekmek üretiminde rekabetin ölçüsü artık yalnızca saatte çıkan ekmek sayısı değil. Değişen talebe cevap verme hızı, aynı hatta farklı reçetelerin istikrarlı kaliteyle üre- tilebilmesi ve enerji ile işçilik kayıplarının görünür kılınması da kapasitenin gerçek değerini belirliyor. Avrupa’da yüksek maliyetler ve iş gücü açığı, Türkiye’de ise fiyat baskısı ve ürün çeşitlenmesi üreticileri aynı soruya yöneltiyor: Yeni bir hat mı kurulmalı, yoksa mevcut hat daha akıllı ve esnek hale mi getirilmeli?
