Automation does not remove responsibility for food safety. The boundary between automated decisions and human approval must be explicit for allergen changeovers, foreign-body controls, weighing and traceability records. Because modular design creates more joints and surfaces, it must also follow the principles of tool-free disassembly, open access and verifiable cleaning. A shared agenda for Europe and Türkiye In Europe, mature markets, high labour costs, the energy transition and packaging regulation are directing invest- ment towards resource efficiency. The growth of the bake- off model is increasing the frequency of product changes at central plants and raising the importance of frozen-product and cold-chain management. At ageing facilities, modernis- ing sensors, controls, burners, drives and the data layer is gaining ground over the wholesale replacement of ovens and conveyors. Common communication standards also make it easier to compare KPIs across plants and replicate proven practices. Türkiye’s strong flour industry, machinery manufacturing base and proximity to export markets offer important advan- tages. Yet financing costs, exchange-rate volatility and price pressure in staple bread favour measurable modernisation projects with rapid payback over sweeping transformations. The priority should be reliable tracking of a small set of in- dicators, including saleable output, unplanned downtime, changeover time, right-first-time production, energy per ki- logram and product loss. For domestic machinery manufac- turers, the new competitive ground is defined by open data interfaces, rapid format changes, hygienic design, secure remote service and lifecycle support. The capacity of the future is the capacity to create options Automation does not eliminate the need for people; it changes the skills required. Operators must interpret pro- cess data, maintenance teams must read trends, and qual- ity teams must validate the measurement system. Alongside maximum speed, purchasing decisions should test change- over time with an actual recipe, time to first good product, cleaning, data ownership, software support and the integra- tion of future modules. The winner in the coming period will not be the company with the largest oven, but the producer that can adapt its port- folio as demand changes, manufacture small batches eco- nomically and stabilise the quality of a new product from the first shift. Product diversity and the energy transition in Europe, and cost pressure and export opportunities in Türkiye, point to the same conclusion: the most valuable definition of capacity is not producing more, but producing the right product at the right time with less loss. yöneltiyor. Buna kar- şılık finansman maliyeti, kur oynaklığı ve temel ekmekteki fi- yat baskısı, büyük dönüşümler yerine ölçülebilir ve hızlı geri dönen modernizasyonları öne çıkarıyor. Öncelik; satılabilir ürün, plansız duruş, değişim süresi, ilk seferde doğru üretim, kilogram başına enerji ve ürün kaybı gibi birkaç göstergenin güvenilir biçimde izlenmesi olmalıdır. Yerli makine üreticileri için rekabetin yeni zemini de açık veri arayüzü, hızlı format değişimi, hijyenik tasarım, güvenli uzaktan servis ve yaşam döngüsü desteğidir. Geleceğin kapasitesi seçenek üretme kapasitesi Otomasyon insan ihtiyacını ortadan kaldırmıyor; ihtiyaç duyulan beceriyi değiştiriyor. Operatörün proses verisini yo- rumlaması, bakım ekibinin eğilimleri okuyabilmesi ve kalite ekibinin ölçüm sistemini doğrulaması gerekiyor. Satın alma kararında maksimum hızın yanında gerçek reçeteyle deği- şim süresi, ilk iyi ürün, temizlik, veri sahipliği, yazılım desteği ve gelecekteki modüllerin entegrasyonu sınanmalıdır. Önümüzdeki dönemin kazananı en büyük fırına sahip şir- ket değil; talep değiştiğinde portföyünü uyarlayan, küçük partiyi ekonomik üreten ve yeni ürünün kalitesini ilk vardiya- dan itibaren istikrarlı hale getiren üretici olacaktır. Avrupa’da çeşitlilik ve enerji dönüşümü, Türkiye’de maliyet baskısı ve ihracat fırsatı aynı sonuca işaret ediyor: Kapasitenin en de- ğerli tanımı daha çok üretmek değil, doğru ürünü doğru za- manda daha az kayıpla üretebilmektir.
