FEDIMA President Thomas Lesaffre, FEDIMA Board Members, and a 70-member delegation from 20 dif- ferent countries visited the Ahmet İsvan Factory. The European delegation toured Turkey’s first and only sourdough loaf pro- duction line with the longest fermentation time and the high-capacity sourdough bread production line with extended fer- mentation. Federation representatives, who set the standards for the bread pro- duction industry across Europe, examined the standards, innovation and sustainabil- ity approaches, production techniques, and hygiene standards of the Ahmet İsvan Factory. During the visit, sector represen- tatives received information about the fac- tory’s production processes. In the inspec- tion at the production center, Halk Ekmek’s sustainable production approach, quality control processes, and product development efforts aimed at healthy nutrition stood out, along with its approach of of- fering high quality at affordable prices. Federation officials stated that the innovative approaches introduced by Istanbul Halk Ekmek are inspiring for other producers in Europe and that collaboration opportunities present a chance to enhance mutual relations. The visit was also attended by Dr. Mehmet Çetin Duruk, Chairman of the Board of the Association of Food Ingredi- ents and Developers Industrialists, Vice Chairman Süleyman Özdoğan, Board Member Ercan Topcuol, Secretary General Canan Elibollar, and other representatives. European bakers find Istanbul Halk Ekmek inspiring Members of the Federation of European Manufactur- ers and Suppliers of Ingredients to the Bakery, Con- fectionery, and Patisserie Industries (FEDIMA), who held their 2024 General Assembly Meeting in Istan- bul, visited the Istanbul Halk Ekmek Factory. Avrupalı fırıncılar İstanbul Halk Ekmek’i ilham verici buldu 2024 yılı Genel Kurul Toplantısını İstanbul’da gerçekleş- tiren Avrupa Fırıncılık, Şekerleme ve Pastane Endüstrisi Malzemeleri Üreticileri ve Tedarikçileri Federasyonu (FE- DIMA) üyeleri İstanbul Halk Ekmek Fabrikasında incele- melerde bulundu. İstanbul Bü- yükşehir Beledi- yesi (İBB) iştiraki İstanbul Halk Ekmek (İHE), Avrupa’nın en büyük ekmek üreticileri ile bu- luştu. FEDIMA Başkanı Thomas Lesaffre, FEDI- MA Yönetim Kurulu Üyeleri ve 20 farklı ülkeden 70 kişilik heyet Ahmet İsvan Fabrikasını ziyaret etti. Avrupalı heyet, Türkiye’nin ilk ve tek en uzun mayalama süresi olan “ekşi mayalı somun ekmek” üretim hattını ve en yüksek üretim kapa- siteli uzun fermentasyonlu “ekşi mayalı çeşit ekmek” üretim hattını gezdi. Ekmek üretim sektöründe Avrupa ge- nelinde standartları belirleyen federas- yon temsilcileri, Ahmet İsvan fabrikasının standartlarını, inovasyon ve sürdürülebi- lirlik yaklaşımlarını, üretim tekniklerini ve hijyen standartlarını yerinde inceledi. Ziyaret sırasında sektör temsilcileri, fab- rikanın üretim süreçleri hakkında bilgi aldı. Üretim merkezindeki incelemede; Halk Ekmek’in sürdürülebilir üretim an- layışı, kalite kontrol süreçleri ve sağlıklı beslenmeye yönelik ürün geliştirme çalışmaları, yüksek kaliteyi uygun fiyatlarla sunan yaklaşımı öne çıktı. Federasyon yetkilileri İstanbul Halk Ekmek’in sektöre kazandırdığı yenilikçi yaklaşımların, Avrupa’daki diğer üreticiler için ilham verici olduğunu ve iş birliği imkanlarının karşılıklı ilişkilerin geliştirilmesi için bir fır- sat olduğunu ifade ettiler. Ziyarete Gıda Bileşenleri ve Geliştiricileri Sanayicileri Der- neği Yönetim Kurulu Başkanı Dr. Mehmet Çetin Duruk, Baş- kan Yardımcısı Süleyman Özdoğan, Yönetim Kurulu Üyesi Ercan Topcuol, Genel Sekreter Canan Elibollar ve temsilci- leri de katıldı.
