BBM • JULY - TEMMUZ 2026 27 Speaking at the IDMA Global Grain & Milling Forum held in Is- tanbul, Erhan Özmen, Chairman of the Board of Özmen Flour and one of the industry’s most respected figures, outlined the new competitive framework for the milling industry. He emphasized that, in an environment characterized by intense competition and shrinking profit margins, companies seeking to differentiate themselves must invest not only in production capacity but also in technology, datamanagement, qualified human resources, know- how, brand-specific product development capabilities and a zero- defect production philosophy. Addressing the session titled “Industry 4.0 in Milling: Smart, Sustainable and Scalable,” Özmen stressed that the primary force shaping the future of the milling industry is no longer limited to advances in production technologies, but is increasingly driven by the rapid transformation of the bakery sector. Beginning his speech by thanking the organizers of IDMA, Özmen noted that the world is changing at an unprecedented pace, affecting everyone from cor- porations to individuals. He said that companies must now ask themselves, “How well are we adapting to this trans- formation?” and emphasized that the milling industry cannot remain outside this process of change. THE BAKERY INDUSTRY IS EVOLVING RAPIDLY According to Özmen, one of the most significant forces driving transforma- tion in the milling industry is the rapid evolution of the bakery sector itself. He pointed out that the world embraces a remarkably diverse bakery culture, rang- ing from bread, pastries and traditional filled pastries to croissants, pizza and industrial baked goods. Every street, neighborhood, city and country, he said, has its own distinctive bakery traditions. This diversity is continuously reshaping market demand, requir- ing the milling industry to respond at the same pace. Özmen em- phasized that Industry 4.0, digitalization and artificial intelligence- powered technologies are no longer optional for the sector—they have become essential requirements. QUALIFIED HUMAN RESOURCES ARE BECOMING INCREASINGLY IMPORTANT Having established Türkiye’s first modern flour mill built on In- dustry 4.0 technologies, Özmen cited his own company’s work- force structure as an example of how technological transforma- tion is reshaping human resource requirements. He noted that the number of white-collar employees at Özmen Flour is twice that of blue-collar workers, emphasizing that this is far from coin- cidental. Forumun “Değirmencilikte Endüstri 4.0: Akıllı, Sürdürüle- bilir ve Ölçeklenebilir” oturumunda konuşan Erhan Özmen, değirmencilik sektörünün geleceğini belirleyecek temel di- namiğin artık yalnızca üretim teknolojileri değil, unlu mamul- ler sektöründeki hızlı dönüşüm olduğunu vurguladı. Konuşmasına IDMA organizasyonuna teşekkür ederek başlayan Özmen, dünyanın çok hızlı değiştiğini belirterek, bu dönüşümün şirketlerden bireylere kadar herkesi etkile- diğini söyledi. Kurumların artık kendilerine “Bu değişime ne kadar uyum sağlayabiliyoruz?” sorusunu sorması gerektiğini ifade eden Özmen, değirmencilik sektörünün de bu değişi- min dışında kalamayacağını dile getirdi. UNLU MAMULLER DÜNYASI HIZLA DEĞİŞİYOR Özmen’e göre değirmencilik sektörünü dönüşüme zorla- yan en önemli unsurlardan biri, unlu mamuller sektöründeki hızlı değişim. Dünyada ekmekten tatlıya, börekten kruvasa- na, pizzadan endüstriyel unlu mamullere kadar çok geniş bir tüketim kültürü bulunduğunu belirten Özmen, her sokağın, her mahallenin, her şehrin ve her ülkenin kendine özgü bir unlu mamul kültürü olduğunu vurguladı. Bu geniş tüketim yapısının talebi sürekli artırdığını ve de- ğiştirdiğini ifade eden Özmen, değirmencilik sektörünün bu değişime aynı hızda cevap vermek zorunda olduğunu söyledi.
