Hollanda Beslenme Merkezi’nin sağlıklı beslenme yaklaşı- mında da tam tahıllı tahıl ürünleri önemli bir yere sahip. Ku- rumun “Schijf van Vijf” olarak bilinen beslenme modelinde sebze, meyve, bakliyat ve kuruyemişlerle birlikte tam tahıllı ürünlerin artırılması öneriliyor. Bu durum makarna ve fırıncılık endüstrisine önemli bir me- saj veriyor: Hollanda pazarında geleceğin rekabeti yalnızca fiyat üzerinden değil, besin değeri, sürdürülebilirlik, kolaylık ve ürün çeşitliliği üzerinden şekillenecek. Tahıldan katma değere Hollanda modeli Hollanda’nın tahıl, un, makarna ve ekmek zincirine ilişkin rakamlar birlikte değerlendirildiğinde oldukça karakteristik bir ekonomik model ortaya çıkıyor. Ülkenin buğday üretimi iyi yıllarda 1 milyon tonun üzerine çıkabilmesine rağmen hava koşullarına karşı hassas. Üstelik yerli buğdayın tamamı yüksek kaliteli değirmencilik kullanı- mına uygun değil. Buna rağmen Hollanda yaklaşık 1 milyon tonluk un üretim kapasitesini besleyebiliyor, 100 bin tonun üzerinde un ihraç ediyor ve milyarlarca dolarlık unlu mamul- ler ticareti gerçekleştiriyor. Bu başarının arkasında Rotterdam gibi dünyanın en önemli limanlarından birine sahip olması, Avrupa’nın büyük tüketici pazarlarına birkaç saatlik mesafede bulunması, ge- lişmiş depolama ve lojistik sistemi, modern değirmencilik ve fırıncılık teknolojileri ile güçlü perakende altyapısı bu- lunuyor. Hollanda böylece tarımsal üretimde sahip olduğu fiziksel sınırları ticaret, teknoloji ve katma değerle aşan ülkelerin en başarılı örneklerinden birini oluşturuyor. Sektör açısından bakıldığında ise ülke oldukça ilginç bir pazar sunuyor. Bir tarafta ithal buğdaya ihtiyaç duyan ge- lişmiş bir değirmencilik sanayisi, diğer tarafta köklü bir ek- mek kültürü ve yüksek teknoloji kullanan endüstriyel fırın- cılık sektörü bulunuyor. Bunlara büyüyen makarna pazarı, tam tahıl ve fonksiyonel ürünlere yönelik tüketici talebi ve Avrupa’nın merkezindeki güçlü lojistik altyapısı eklendiğin- de Hollanda, küresel tahıl ve unlu mamuller endüstrisinin küçük ama son derece stratejik merkezlerinden biri olarak öne çıkıyor. the “Schijf van Vijf”, the organisation recommends increas- ing the consumption of wholegrain products alongside veg- etables, fruit, pulses and nuts. This sends an important message to the pasta and bakery in- dustries: future competition in the Dutch market will be shaped not only by price, but also by nutritional value, sustainabil- ity, convenience and product diversity. The Dutch model: from grain to added value When the figures for the Netherlands’ grain, flour, pasta and bread value chains are consid- ered together, a highly distinctive economic model emerges. Although the country’s wheat produc- tion can exceed 1 million tonnes in favour- able years, it remains vulnerable to weather conditions. Moreover, not all domestically produced wheat is suitable for high-quality milling applications. Despite this, the Nether- lands is able to support flour production capacity of approximately 1 million tonnes, export more than 100,000 tonnes of flour and conduct trade worth billions of dollars in bakery products. Behind this success are the Port of Rotterdam, one of the world’s most important ports; the country’s location within a few hours of Europe’s major consumer markets; its advanced stor- age and logistics systems; modern milling and bakery technolo- gies; and strong retail infrastructure. The Netherlands therefore represents one of the most suc- cessful examples of a country overcoming the physical limita- tions of its agricultural production through trade, technology and added value. From an industry perspective, the country also offers a par- ticularly interesting market. On one side is an advanced milling industry that requires imported wheat; on the other is a deeply rooted bread culture supported by a high-tech industrial bak- ery sector. Add to this a growing pasta market, consumer de- mand for wholegrain and functional products, and strong logis- tics infrastructure at the heart of Europe, and the Netherlands emerges as a small but highly strategic hub in the global grain and bakery products industry.
