BBM Magazine 105 - October/Ekim 2026

editör editor Dear Readers, The food industry is going through a period in which consumer expectations are changing faster than ever. Health, taste, convenience and affordability are no longer separate demands. Consumers increasingly expect all of them in the same product. This shift is reshaping not only product development across the bakery, biscuit and pasta industries, but the entire value chain—from raw material selection and formulation to production technologies and energy use. In the October issue of BBM Magazine, we turn our attention to one of the most dynamic areas of this transformation: baked snacks. In our cover story, “Baked Snacks 2.0: Health, Taste and Added Value,” we explore the trends reshaping the market, from high-protein products and low-sugar formulations to functional ingredients and on-the-go consumption. Yet the challenge goes far beyond launching new products. For manufacturers, the real competitive edge lies in developing production models that can respond rapidly to changing demand, optimize energy and raw material use, maintain consistent quality and taste, and keep costs under control. For this issue’s Country Profile, we turn our focus to the United Kingdom. With its strong milling and bakery infrastructure, deep-rooted bread culture and multicultural consumer landscape, the UK provides an important example of how a mature market is responding to evolving expectations. We examine the production and consumption chain from wheat and flour to bread and pasta, supported by industry data and current market dynamics. The period ahead will be defined not simply by producing more, but by producing the right products more efficiently and with greater added value. We believe that companies capable of understanding consumers, placing technology at the heart of production and adapting quickly to change will be best positioned to stand out in an increasingly competitive market. Enjoy the issue. Keyifli okumalar dilerim.
