Organized for the fourth time this year by the Food, Bev- erage and Agriculture Policies Center (GIFT), the Food Plus Awards recognize the most innovative projects in the indus- try. Puratos, a leading provider of products and solutions for the bakery, patisserie, and chocolate sectors, was honored for its groundbreaking initiative. Out of 209 applications from 71 companies across 35 categories, the Legacy Wheat Project / Sapore Zerun won the award in the category of “Most Innova- tive Food Literacy Initiative.” Launched in 2023, Puratos Türkiye’s Legacy Wheat Project aims to preserve, document, and revive Anatolia’s local wheat heritage. As part of the project, the long-forgotten ances- tral Zerun wheat was reintroduced to the soil in the village of Kuşkayası and its Çalözü hamlet in Sivas, in collaboration with academics from various disciplines. Using this heritage wheat, Sapore Zerun sourdough and Turna Bread recipes were de- veloped. The story of the Aktan family, who have passed down Zerun wheat as a legacy through generations, was also docu- mented in a film produced with the sponsorship of Puratos. Pandemi ve küresel krizler, gıda üretimi ve lojistiğin insanlık için ne kadar stratejik olduğunu bir kez daha gösterdi. Bu dö- nemde gıda zincirinde yaşanan aksaklıklar, üretimden taşıma- ya kadar her sürecin önemini ortaya koydu. Ekmekçilik, pastacılık ve çikolata sektörlerine ürün ve çö- zümler sunan Puratos, inovatif projesiyle ödüle layık görüldü. 71 firmanın 209 başvurusu arasından 35 kategoride en yenilik- çi projelerin seçildiği organizasyonda, Yadigâr Buğdaylar Pro- jesi / Sapore Zerun, “En Yenilikçi Gıda Okuryazarlığı Girişimi” kategorisinde ödülün sahibi oldu. Puratos Türkiye’nin Yadigâr Buğdaylar Projesi, Anadolu’nun yerel buğday mirasını korumak, belgelemek ve yeniden üretime kazandırmak amacıyla 2023 yılında başlatıldı. Proje kapsamında Sivas’ın Kuşkayası Köyü, Çalözü Mezrası’nda unutulmaya yüz tutmuş (atalık) yadigâr Zerun buğdayı farklı di- siplinlerden akademisyenlerle birlikte yeniden toprağa kazan- dırıldı; bu buğdaydan elde edilen Sapore Zerun ekşi mayası ile Turna Ekmeği reçeteleri geliştirildi. Yadigâr Zerun buğda- yını bir miras olarak nesillerdir geleceğe aktaran çiftçi Aktan Ailesi’nin hikayesi ise Puratos sponsorluğunda bir belgesel olarak kayıt altına alındı. Puratos Türkiye Pazarlama Direktörü Eyüp Türkoğlu, “Pu- ratos olarak ekmekçiliğin geleceğini geçmişin değerleriyle buluşturuyor; hem üreticilerin hem tüketicilerin Anadolu’nun mirası olan bu hikâyeye bilgiyle, bilinçle dahil olmasını önem- siyoruz” dedi.
