BBM • OCTOBER - EKİM 2026 BBM • OCTOBER - EKİM 2026 56 57 expected to retain its texture in a ready meal all represent differ- ent technical requirements within the same grain economy. At the heart of this UK country profile is the relationship between agri- cultural production and a food industry increasingly specialised according to end use. WHEAT PRODUCTION RECOVERS, BUT TRADE REMAINS IN DEFICIT According to data from the UK Department for Environment, Food & Rural Affairs (Defra), wheat production declined from 13.98 million tonnes in 2023 to 11.146 million tonnes in 2024, before rising to 11.958 million tonnes in 2025. The approximately 7.3% recovery in the latest year was supported by an increase in the planted area from 1.531 million hectares to 1.670 million hectares. Average yield, meanwhile, slipped from 7.3 tonnes per hectare to 7.2 tonnes. The increase in production therefore came primarily from a larger cultivated area rather than higher yields. The foreign trade balance underlines the country’s need for im- ports. In 2025, the UK imported approximately 2.7 million tonnes of wheat while exporting 207,000 tonnes. Although imports de- clined by 13% compared with the previous year, they remained far above exports. The country was a net importer of wheat through- out the 2017–2025 period. Amore recent indicator specific to England comes fromDefra’s provisional harvest estimate dated 8 October 2026. The depart- ment estimated England’s 2026 wheat production at 10.8 million tonnes, representing a year-on-year increase of 0.8%. Average yield was estimated at 7.2 tonnes per hectare. This figure should not be directly compared with the 2025 production figure for the United Kingdom as a whole. The overall picture shows a strong milling and baking industry operating alongside international grain supply. For manufactur- ers, the challenge is not simply to secure sufficient quantities of wheat. Obtaining the right quality, at the right time and at a pre- dictable cost is equally important. BREAD FLOUR FORMS THE BACKBONE OF THE MILLING INDUSTRY According to UK Flour Millers’ 2025 annual review, flour production in the United Kingdom declined from 3.851 million tonnes in 2023/24 to 3.782 million tonnes in 2024/25. Bread flour accounted for 2.644 million tonnes, or 69.9% of total pro- duction, while biscuit flour represented 547,200 tonnes, or 14.5%. Flour produced for household use amounted to 194,000 tonnes. The same report puts wheat usage in 2024/25 at 4.819 million tonnes. The share of domestically produced wheat fell from 77.9% in the previous season to 68.7%. These figures are a reminder that the strength of domestic flour production and the share of domestically sourced wheat are two separate indicators. On the export side, figures cited by the organisation fromHMRC foreign trade statistics show that flour exports stood at 199,931 tonnes in 2025, compared with 208,571 tonnes in 2024. Over the same period, bread exports increased from 90,144 tonnes to 98,913 tonnes. This corresponds to a decline of approximately 4.1% in flour exports and an increase of around 9.7% in bread exports. Bread production, the milling industry’s principal source of de- mand, directly connects flour milling with the retail and foodser- vice economies. For large customers, batch-to-batch consistency, continuity of supply and technical support tailored to the intended application are critical. For smaller producers, flour varieties that enable product differentiation become increasingly important. This structure takes competition among millers well beyond the sale of a standard commodity. PUTTING THE SCALE OF INDUSTRIAL BREAD PRODUCTION INTO PERSPECTIVE According to the UK Office for National Statistics (ONS) PROD- COM tables, producer sales volume in the fresh bread category stood at 2.506 million tonnes in 2024 and 2.337 million tonnes in 2025. The corresponding sales value in 2025 was approximately £3.314 billion. The category covers certain types of fresh bread na, aynı tahıl ekonomisi içinde farklı teknik ihtiyaçları temsil eder. BUĞDAYDA TOPARLANMA, DIŞ TICARETTE AÇIK Birleşik Krallık Çevre, Gıda ve Köyişleri Bakanlığı’nın (Def- ra) verilerine göre buğday üretimi 2023’teki 13,98 milyon tondan 2024’te 11,146 milyon tona geriledi; 2025’te 11,958 milyon tona çıktı. Son yıldaki yaklaşık yüzde 7,3’lük topar- lanmada ekim alanının 1,531 milyon hektardan 1,670 milyon hektara yükselmesi etkili oldu. Ortalama verim ise hektar başına 7,3 tondan 7,2 tona indi. Böylece üretimdeki artış, verimden çok alan genişlemesine dayandı. Dış ticaret dengesi, ülkenin ithalata duyduğu ihtiyacı or- taya koyuyor.
