SOURDOUGH AND INGREDIENT TRANSPARENCY Alongside a strong packaged-products market, another ap- proach places greater emphasis on production methods and ingredient declarations. Sustain’s Real Bread Campaign advo- cates bread made without additives and applies criteria includ- ing leavening with a live sourdough culture and the absence of additives when using the term “sourdough”. These are the campaign’s own definitions. The existence of this movement demonstrates the impor- tance of communicating product claims clearly. Expectations created by terms such as “sourdough” or “traditional” need to be supported by formulation and process. Across different seg- ments of the market, price, softness, fermentation characteristics and in- gredient simplicity can carry different levels of importance. Britain’s multicultural food environ- ment further broadens product diver- sity. The pairing of curry and naan fea- tured in VisitBritain’s presentation of food in England is one visible example of this diversity. Bread culture in the UK therefore cannot be understood through a single national loaf alone. DIFFERENT ROLES FOR DOMESTIC PRODUCTION AND IMPORTS IN PASTA Pasta requires a distinction be- tween individual product categories. According to the ONS PRODCOM tables, producer sales volume for un- cooked, unstuffed pasta not contain- ing eggs was 40,030 tonnes in 2024. The 2025 volume for this category is withheld for confidentiality reasons. For uncooked, unstuffed pasta con- taining eggs, the 2025 volume was approximately 19,274 tonnes, although the figure carries a high degree of estimation. Filled pasta produc- tion stood at approximately 15,007 tonnes in 2025. Norwich-based Pasta Foods provides an example of specialisa- tion within the domestic industry. The company states that it pro- cesses globally sourced durumwheat in its own semolina mill and develops pasta for applications including canned foods, salads, chilled and frozen ready meals, and foodservice. This illustrates the importance of pasta in the UK not only as a standalone con- sumer product but also as an ingredient in other prepared foods. These applications create different technical expectations. Unlike pasta cooked once at home, a product subjected to a second heat treatment or stored together with sauce must re- tain its texture under more demanding conditions. The value offered by manufacturers therefore also depends on pasta shape, cooking tolerance and compatibility with subsequent processing conditions. FOREIGN TRADE REVEALS THE SCALE OF THE CONSUMER MARKET According to UN Comtrade data published through the World Bank’s WITS platform, the United Kingdom imported 317,444 tonnes of uncooked, unstuffed pasta not containing eggs under HS 190219 in 2024. The value of these imports was approximately $460.4 million. Exports in the same category amounted to 5,426 tonnes, worth $11.3 million. Net imports in this product category alone therefore reached approximately 312,000 tonnes. According to Eurostat, the United Kingdom accounted for 25% of the European Union’s extra-EU pasta exports in 2024. This fig- ure underlines the country’s significance as a major sales market, irrespective of its position in the production rankings. AN ITALIAN STAPLE AT HOME ON THE BRITISH TABLE The cultural position of pasta in the UK should be under- stood not only through its connection with Italian cuisine but also through everyday eating habits.
