According to the new tariff, the price per kilogram of bread has been revised across Türkiye not to exceed 87.5 TL. President Balcı pointed out that since August 2025, there has been a 45% increase in the price of flour—the main raw material—and a 36% increase in operating expenses. Stating that the 16% increase implemented after 8 months despite this cost pressure is at the “most reasonable level,” Balcı said: “Bak- ery tradesmen have shown great sensitivity regarding the fight against inflation. While the total price increase in bread over the last 15 months has been 39%, according to TURKSTAT data, the 14-month inflation rate stands at 38.69%. Balcı em- phasized that bakery tradesmen are the segment show- ing the greatest sacrifice in the fight against inflation. Ekmekte yeni fiyat tarifesi yürürlüğe girdi: Ekmeğin kilosu 87.5 TL’yi geçmeyecek Türkiye Fırıncılar Federasyonu Başkanı Halil İbrahim Balcı, 1 Nisan itibarıyla ekmek fiyatlarında gidilen %16’lık artışın gerekçelerini açıkladı. Balcı, fırıncı esnafının enf- lasyonla mücadelede en büyük özveriyi gösteren kesim olduğunu vurguladı. Türkiye Fırıncılar Federasyonu Başkanı Halil İbrahim Bal- cı, Ocak ayında yapılması planlanan ancak Ramazan ayının bereketi ve vatandaşın mağdur olmaması adına ertelenen ekmek fiyat düzenlemesinin detaylarını paylaştı. Yeni tarife- ye göre ekmeğin kilogram fiyatı Türkiye genelinde 87.5 TL’yi geçmeyecek şekilde revize edildi. Başkan Balcı, 2025 yılının Ağustos ayından bu yana ana hammadde olan un fiyatlarında %45, işletme giderlerinde ise %36’lık bir artış yaşandığına dikkat çekti. Bu maliyet bas- kısına rağmen 8 ay sonra yapılan %16’lık artışın “en makul düzey” olduğunu belirten Balcı, “Fırıncı esnafı enflasyonla mücadele konusunda büyük bir hassasiyet gösterdi. Son 15 ayda ekmekteki toplam fiyat artışı %39 olurken, TÜİK veri- lerine göre 14 aylık enflasyon %38,69 seviyesindedir. Yani artış oranlarımız enflasyon rakamlarıyla birebir örtüşmekte- dir” dedi. Addressing other stakeholders in the sector, Balcı expressed that the sacrifice shown by bakers should also be demonstrat- ed by flour industrialists. Stating that the uncontrolled increase in flour prices is unacceptable, Balcı noted that another major problem is “bread returns” at chain supermarkets. “RETURN” WARNING TO CHAIN SUPERMARKETS Reminding that approximately 6 million loaves of bread are wasted daily, Balcı emphasized that high return rates, espe- cially at chain supermarkets, drive costs upward. Balcı warned: “Buying 150 loaves and returning 50 causes our tradesmen to suffer. If this problem is not resolved, we may bring the issue of halting bread sales at chain supermarkets in the vicinity of bakeries to the agenda by meeting with the relevant ministries.” As of today, starting with metropolitan cities such as Istanbul, Ankara, Izmir, Bursa, and Kocaeli, 200 grams of bread began to be offered for sale at 17.5 TL, or 230 grams of bread at 20 TL in many provinces. Balcı added that the production of specialty breads (whole wheat, bran, etc.) brings an additional labor bur- den to the baker due to low demand. 200 GRAMS OF BREAD IS 17.5 LIRA IN ISTANBUL On the other hand, according to the statement made by the Istanbul Chamber of Commerce, Bread, Flour, and Flour Prod- ucts Committee, according to the maximum bread price tariff to be applied throughout the city: 200 Grams of Bread: 17.50 TL (Maximum), 1 Kilogram of Bread: 87.50 TL (Maximum). Tak- ing transport and operating costs into account, the price for 1 kilogram of bread in the Adalar (Princes’ Islands) district was determined as 96.25 TL. 200 17.5 BREAD EKMEK LİRA GRAMS Sektörün diğer paydaşlarına da seslenen Balcı, fırıncıların gösterdiği fedakarlığın un sanayicileri tarafından da gös- terilmesi gerektiğini ifade etti. Un fiyatlarındaki kontrolsüz artışın kabul edilemez olduğunu söyleyen Balcı, bir diğer büyük sorunun ise zincir marketlerdeki “ekmek iadesi” ol- duğunu belirtti. ZINCIR MARKETLERE “İADE” UYARISI Günde yaklaşık 6 milyon adet ekmeğin israf edildiğini ha- tırlatan Balcı, özellikle zincir marketlerin yüksek iade oranla- rının maliyetleri yukarı çektiğini vurguladı. Balcı, “150 ekmek alıp 50’sini iade etmek esnafımızı mağdur etmektedir. Bu sorun çözülmezse, ilgili bakanlıklarla görüşerek fırın çevre- lerindeki zincir marketlerde ekmek satışının durdurulması konusunu gündeme getirebiliriz” uyarısında bulundu. Bugün itibarıyla İstanbul, Ankara, İzmir, Bursa ve Kocaeli gibi büyükşehirler başta olmak üzere birçok ilde 200 gram ekmek 17,5 TL veya 230 gram ekmek 20 TL üzerinden sa- tışa sunulmaya başlandı. Balcı, çeşit ekmek (tam buğday, kepekli vb.) üretiminin düşük talep nedeniyle fırıncıya ek bir işçilik külfeti getirdiğini de sözlerine ekledi. İSTANBUL’DA 200 GRAM EKMEK 17,5 LIRA Öte yandan İstanbul Ticaret Odası, Ekmek, Un ve Unlu Mamuller Komitesi tarafından yapılan açıklamaya göre, şehir genelinde uygulanacak azami ekmek fiyat tarifesine göre ​200 Gram Ekmek: 17,50 TL (Azami) ​1 Kilogram Ekmek: 87,50 TL (Azami) ve ​Adalar İlçesi nakliye ve işletme mali- yetleri göz önünde bulundurularak 1 kilogram ekmek fiyatı 96,25 TL olarak belirlendi.
