The 5,000-year-old bread heritage uncovered during excavations at Küllüoba in Eskişehir has been brought back to life through Lesaffre Türkiye’s expertise spanning more than 170 years. Available to bakeries from October, Inventis Küllüoba Bread Mix combines ancient grains with nutritional benefits, offering a taste of history to mark World Bread Day on 16 October.

Bread, one of humanity’s oldest and most unifying foods, embodies a rich cultural memory that has endured across Anatolia for thousands of years. Drawing on its global expertise in fermentation and baking solutions, Lesaffre Türkiye has introduced its latest product to the baking industry with the aim of preserving this heritage. An archaeological discovery dating back approximately 5,000 years, unearthed during excavations supported by the company, has now inspired Inventis Küllüoba Bread Mix, bringing this legacy to bakery counters. Introduced to bakeries around World Bread Day on 16 October, the bread offers an alternative to uniform industrial products, bringing the richness and nutritional qualities of ancient grains to today’s tables.

Having attracted considerable attention in the world of gastronomy, the Küllüoba project has now become a lasting and accessible offering under Lesaffre’s innovative Inventis brand. Combining ancient grains such as Khorasan and Gacer wheat with whole wheat flour and lentil flour, the mix brings together ingredients rooted in Anatolia’s agricultural heritage, connecting the rich flavours of the past with contemporary eating habits. A natural source of plant protein and high in fibre, the recipe supports a balanced diet while enabling bakers to recreate a heritage spanning thousands of years with practical preparation and consistent quality.
