The month of Ramadan symbolizes sharing, solidarity, and abundance. Staying true to its roots, Söke, one of Turkey’s leading flour brands, is bringing back the traditional Ramadan delicacy, fodula (stuffed bread), in collaboration with the Sökeli Women’s Cooperative.
A part of the Ulusoy Un family and a staple in kitchens for 62 years, Söke is spearheading the fodula project together with the Sökeli Women’s Cooperative. The special bread prepared for fodula is produced in Söke’s factory, which holds the highest “AA” rating from the BRC unannounced audit. The skilled hands of the Sökeli Women’s Cooperative then transform this bread into a registered trademark fodula, reviving this traditional flavor in line with the spirit of Ramadan. Beyond preserving a historical recipe, the project also aims to support local production and empower women’s labor. It further seeks to enhance awareness of fodula and pass it on to future generations.
A staple of Aydın and İzmir cuisine, fodula holds a special place in Söke’s culinary heritage. The specially prepared bread is filled with a flavorful mixture of minced meat and walnuts. Once ready, the fodula is sold, providing an additional source of income for the Sökeli Women’s Cooperative.
